COURSE I: Asparagus with Hollandaise and Black Truffle
2022 Emmolo Sauvignon Blanc

Guided by the idea that “less is more,” this wine is dry and fresh, with crisp fruit flavors and bright minerality. Some of our grapes come from family vineyards in Napa Valley, with the rest coming from Suisun Valley, a “hidden gem” wine region only a short drive from Napa. Suisun shares a similar maritime climate and produces exceptional fruit. Our farming practices enable us to create a wine that is not overly ripe – while also not herbaceous – featuring low alcohol and bright acidity.

COURSE II: Bay Scallops with Creamy Navy Beans, Chorizo Iberico, and Grilled Scallions
2022 Mer Soliel Reserve Chardonnay

Taking its name from the sea and sun – the two forces of nature that shape its exotic character – this wine is as dramatic as the place where it is sourced. With morning fog, bright sunshine and gusting winds, Monterey County has an extended growing season. Grapes stay on the vine longer, leading to the development of intense aromas such as custard and toasted almonds, rich fruit flavors and enlivening lemon/lime.

2021 Caymus Cabernet Sauvignon

Caymus has a signature style that is dark in color, with rich fruit and ripe tannins – as approachable in youth as in maturity. Since its founding in 1972, Caymus has become renowned as a consistent leader in the production of Napa Valley Cabernet. Grapes for this wine are farmed in a range of Napa’s sub-appellations – from Coombsville to Calistoga – with fruit from the valley floor creating lushness and the hillsides providing backbone. Diversification enables us to make the best possible wine each year, featuring layered, lush aromas and flavors, including cocoa, cassis and ripe berries.

2020 Caymus-Suisun Grand Durif Petite Sirah

Separated from Napa by just an invisible county line, Suisun Valley (which became an AVA in 1982) is still largely undiscovered. With its warm days and cool nights, this pastoral region reminds us of Napa Valley in the 1960s. Known for delicious stone fruits and walnuts, it is also gaining recognition for exceptional wine. Durif is synonymous with Petite Sirah, the widely grown grape in the region – we added “Grand” to the name for its grand style. With harmonious tannins, this wine is opulent, luxuriously soft, and totally enjoyable.
